In the mood for a little Cajun food with a twist? Jamburritos Cajun Grille-Express is serving up just what you may be looking for.

“We do Cajun food, but we also have a little bit of a Mexican influence,” said Jamburritos employee Lauren Mislove.

“We serve more traditional dishes like chicken etouffee, steak etouffee, fried catfish, but we also throw things like black bean salsa in there.”

Since 2010, the Jamburritos food truck has been boasting a menu inspired by the Cajun cuisine of New Orleans presented Southwestern style. It shares its name with the name of their signature dish, a blend between jambalaya and a burrito.

“We use what I like to call ‘Mexican vehicles,’ so we’ve got the burritos, the tacos, the quesadillas—we do a little bit of everything,” explained Mislove.  And that seemingly odd combination has proven to be a hit.

“Every time I track down the truck, I always get the steak jamburrito,” shared Arizona State University Student Jose Ermac.

“It’s so unique and there’s nothing else like it. The flavors just work together so well.”

Also on the menu are items like their “K-Taco” and “K-Sadillas,” each with etouffee sauce and all the fixings of a savory taco.

As for Mislove, she has a hard time just picking one favorite dish.“I like to get the catfish with a little steak etouffee on top, some hushpuppies,” she said.  "But our Nola jamburrito is also very delicious. It’s all good!”
